Zespri® Kiwifruit Mushroom Open Sandwich
- 1 Zespri® Green Kiwifruit
- 200g of mushrooms including button mushroom, king oyster mushroom, oyster mushroom and shiitake mushroom
- 100g of vegetables including rucola
- 1 baguette
- 2 slices of Gouda cheese
- 1T of butter
- 2 cloves of garlic
- olive oil
- balsamic glaze
Cut the mushrooms into moderate size chunks after cleaning. Stir-fry mushrooms, crushed garlic, salt and pepper in frying pan coated with oil and then sprinkle parsley powder on top.
Spread butter on the upper side of baguette. Place Gouda cheese and bake for 5 minutes in a 180 degree oven.
Wash vegetables including rucola and drain thoroughly. Mix with salt, pepper and a bit of olive oil.
Place mushrooms and vegetables on roasted baguette and spread the balsamic glaze.
Place freshly cut wedge-shaped kiwis on top.
