Zespri® Organic Gold Kiwifruit and Yoghurt Muffins
- 1 – 2 (150g) Zespri® Gold Organic Kiwifruit, peeled and diced
- 220g plain organic flour, sifted
- 2 ½ tsp baking powder
- ½ cup caster sugar
- 1/8 tsp salt
- 1 egg
- ¾ cup vegetable oil or rice bran oil
- ¾ cup organic yoghurt
Preheat oven to 180°C.
Mix together flour, baking powder, caster sugar and salt.
In separate bowl, mix together egg, oil and organic yoghurt. Pour wet ingredients into dry ingredients and add Zespri® Gold Kiwifruit dices. Mix lightly.
Line muffin tin with baking paper and add mixture. Bake for 20 – 25 minutes or until they turn Golden brown.
